The simple answer is no, just use Kung Fu Man.
 
The complicated answer is that there's not really any good template characters because they all have their own issues, even Kung Fu Man. I'd recommend MFG's updated Kung Fu Man, but it features a custom buffering system that uses Explods, which have a global instance limit and can thus be unreliable when characters who use a lot of Explods are present.

Having to download that Pikachu's files individually was annoying.

I've always gone by what the creator was called at the time or whatever was written in the .def. The files are slightly different between the two so I'll keep that one.

Playing Dr. Mario in simul mode has Puyo Puyo's teammate show up on the opponent's side.

That's likely your problem then. The DirectX renderer cannot display RGBA graphics, so you'll need to switch over to OpenGL; this can be done via mugen.cfg.
